It's been a long time since I made just basic cookies.  As a food blogger, you tend to get wrapped up in the creative side of recipes & you skip over the simple, classic ones.  I love being creative but I sometimes miss just making simple recipes just to make them.

That's why I knew when I saw these Peanut Butter CrissCross cookies from my Secret Recipe Club partner, Susan from Food. Baby. Life., that this would be my SRC pick for this month!  Don't get me wrong, Susan's blog had a ton of great recipes to choose from; I think I had at least 10 tabs open when I was searching through her recipe index of possible recipes to make!!  But the classic peanut butter cookie won out.  I love peanut butter & I simply couldn't pass up making a classic.

Plus I love how Susan only lasted 3 days without baking!  We'd get along great!! :)

PEANUT BUTTER CRISSCROSSES 
YIELD: about 2 dozen cookies

INGREDIENTS:
  • 1 & 1/4 cups flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • pinch of salt
  • 1 stick (1/2 cup) butter, softened
  • 1/2 cup peanut butter
  • 1/2 cup light brown sugar
  • 1/3 cup sugar
  • 1 egg
  • 1 teaspoon vanilla
  • extra sugar for rolling

COOKING DIRECTIONS:
  1. Preheat the oven to 350 degrees. Line a large baking sheet with parchment paper.
  2. Whisk together the flour, baking soda, baking powder & salt. Set aside.
  3. In a mixer, beat the butter on medium until smooth and creamy. Add the peanut butter and beat for an additional minute. Add both sugars and beat for about 3 more minutes. Add the egg and vanilla, beating until combined. Scrape down the bottom & sides of the bowl.
  4. Turn the mixer to low and slowly add in the dry ingredients, mixing until just combined. The dough will still be soft & mushy.
  5. Pour some extra sugar into a small bowl. Roll the dough into half tablespoon size balls and then drop it into the sugar & roll it around to coat. Place the dough on the baking sheet, leaving about 2 inches between each ball. Press a fork into the dough to make the crisscrosses.
  6. Bake the cookies for about 10 minutes, or until lightly golden. Cool for a couple of minutes on the baking sheet, then move to a wire rack to cool completely.

Maple Chicken & Waffle Mini Burgers #WaffleWednesdays

Welcome to #WaffleWednesdays y'all!!  I have partnered with Kellogg's to be a Chief Waffle Officer which means I will be sharing Eggo waffle recipes here every Wednesday until the end of October!!  But don't expect eight weeks of boring, waffle-filled breakfasts!  We're thinking outside of the box & cooking up your favorite desserts, game day snacks & holiday treats all using waffles!!

When you think football food, whether it be tailgating or fixing snacks for a party at your house, what's the first thing that comes to mind?  Burgers right??  Everyone wants a nice grilled juicy burger while they are watching football.  The two just go together.

So today for our football snacks #WaffleWednesday, I made a fun play on the yummy chicken & waffles dinner & made y'all some Maple Chicken & Waffle Mini Burgers!  And they were the perfect football food!  The Hubs ate the whole plate full Sunday while we were watching the Cowboys whoop up on the Rams!!

MAPLE CHICKEN & WAFFLE MINI BURGERS 
YIELD: serves 3-4

INGREDIENTS:
  • 1 pound ground chicken
  • 1 - 2 tablespoons maple syrup
  • salt & pepper to season
  • 1 tablespoon canola oil
  • 1 box Eggo Minis Homestyle Waffles {you probably won't need quite the whole box}
  • butter
  • favorite burger fixings {lettuce, tomato, onions, etc}

COOKING DIRECTIONS:
  1. Mix together the ground chicken & maple syrup {use as much or as little based on your taste preference}. Season the meat with salt & pepper. Shape the chicken into tablespoon size balls.
  2. Heat the canola oil in a large skillet over medium heat. Using your hands, flatten the balls into patties & then place in the skillet. Cook until slightly brown on one side and then flip & cook the other side until cooked through & no longer pink, about 5 minutes per side. Repeat for each patty. Alternately, you can grill the chicken over medium heat for about 5 minutes per side or until preferred doneness.
  3. Thaw 2 Eggo Minis Waffles per chicken patty ~ I had 14 patties. Lightly butter one side of each waffle and then toast in a small skillet until just golden.
  4. To assemble: Place one cooked chicken patty on top of one Eggo Minis Waffle. Top the chicken with your favorite burger fixings. Top the burger with a second Eggo Minis Waffle.
