Cheating with Chips #AGiantSurprise #spon


So y'all know that I'm a mom to a silly little 2 year old.  A certain silly little 2 year old that refuses to eat anything other than cereal, chocolate milk, chicken or anything resembling a cupcake.  While I've slowly learned to pick my battles, her nutrition is one of those non negotiables for me.  Which is why I am in love with Green Giant's new Giant Surprise: these Veggie Chips that actually taste good!

With these little snacking goodies, Princess P thinks she's eating just regular chips but I know that she's actually getting some great nutrition.  Think they are probably just another chip claiming to be healthy?  Let's look at some details...

Italian Pasta Salad

This pasta salad is absolutely delicious & so easy to throw together during the day for dinner that night! Only difference I would make is adding additional bacon right before serving because the bacon does lose some of its crispness in the fridge. It still is one of our new favorite pasta salads & I will definitely be making it again!
 
 
 
INGREDIENTS:
  • 1 package (12 ounces) rotini pasta
  • 1 package (12 ounces) center cut bacon
  • 1/3 cup Italian dressing
  • 1/4 cup green onions, chopped
  • 1 cup spinach leaves, roughly chopped
  • 1 can (14.5 ounces) diced tomatoes, drained & rinsed
  • 1 bottle (16 ounces) creamy Italian dressing

LETS COOK:
  1. Bring a large pot of lightly salted water to a boil. Cook the rotini pasta in the boiling water based on package directions, stirring occasionally, until cooked through but firm to the bite; drain.
  2. Fry the bacon in a skillet over medium heat until crisp. Drain bacon on paper towels and crumble. Reserve about 2 tablespoons of the bacon grease.
  3. Wilt spinach in the skillet with the reserved bacon grease over medium heat, 2 to 3 minutes.
  4. Toss cooked pasta with 1/3 cup Italian-style dressing in a large bowl; stir bacon, spinach, and green onions into coated pasta.
  5. Stir creamy Italian-style dressing, and tomatoes into pasta mixture. Chill in refrigerator for at least 4 hours or up to overnight.

Slow Cooked Cuban Pulled Pork

This pork was amazing.  Juicy, tender and the flavor was just perfect.  Serve it on your favorite baguette ~ be sure to toast it up with some butter first ~ with some lettuce, cilantro, caramelized onions, mayo and maybe even some pickles if you're really adventurous.  Trust me, you won't be disappointed.




SLOW COOKED CUBAN PULLED PORK


INGREDIENTS:
  • 1 & 1/2 pounds pork shoulder butt country style ribs
  • 3 cups orange juice
  • 2 tablespoons olive oil
  • juice from 1 small lime
  • 2 tablespoons roasted garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon almond extract
  • salt & pepper to season

COOKING DIRECTIONS:
  1. Combine all ingredients in a slow cooker. Cook on low for 7-8 hours.
  2. Break apart the pork with 2 forks and serve.
