Welcome to #WaffleWednesdays y'all!!  I have partnered with Kellogg's to be a Chief Waffle Officer which means I will be sharing Eggo waffle recipes here every Wednesday until the end of October!!  But don't expect eight weeks of boring, waffle-filled breakfasts!  We're thinking outside of the box & cooking up your favorite desserts, game day snacks & holiday treats all using waffles!!

Do y'all eat breakfast for dinner?  We use to eat it all the time growing up.  I think I could eat a bacon & egg sandwich at least once a week!  The Hubs is not a fan of breakfast for dinner {I know, I know, there is something terribly wrong with him} however, so I tend to end up having breakfast for lunch.  Not to be confused with brunch because I'm eating at like 3 pm, not 10 am! ;)

These Egg in a Hole Waffles make the perfect breakfast for dinner option!  They are easy ~ they take less than 10 minutes to make!!  Serve them with a few strips of bacon & some fruit for a nice balanced meal!  The great thing about them too is that you can customize them!  Throw some shredded cheese on top of your egg while it cooks.  Or chop up some fresh spinach leaves or maybe some bell peppers in with the egg.  Maybe you're a fan of spicy foods ~ add some hot sauce in with the egg!  The possibilities are endless!  And Mom, you won't mind customizing each plate because again, they are so easy to make!!

EGG IN A HOLE WAFFLES 
YIELD: serves 2

INGREDIENTS:

COOKING DIRECTIONS:
  1. Using a round medium-sized biscuit or cookie cutter, cut a circle out of the middle of each waffle. Heat a large skilled over medium heat and add the butter. Tip and tilt the pan to coat it and add the waffle slices to the pan. Carefully crack an egg into each waffle hole. Cook for 2-3 minutes, until the waffles are golden and the egg whites begin to set. Season with salt & pepper and use a spatula to carefully flip each waffle over. Continue to cook until the egg whites are set but the yolk is still soft, about 2-3 minutes more.
