This was a very quick & easy weeknight dinner. If you're a fan of biscuits, then you'll probably enjoy this pizza bake. For us, even with adding a bunch of dried seasoning to the dough, it was still too biscuity tasting.

YIELD: 8 servings
INGREDIENTS:
- 2 packets (7.5 ounces) buttermilk biscuit mix
- 1 teaspoon dried basil
- 1 teaspoon garlic powder
- 1 teaspoon dried oregano
- large pinch crushed red pepper flakes
- 1 cup water
- 1 can (14.5 ounces) diced tomatoes, drained
- 1 cup roughly chopped spinach leaves
- 1 cup alfredo sauce
- 1 package (8 ounces) shredded mozzarella cheese
INSTRUCTIONS:
Heat your oven to 375 degrees. Spray 13 x 9 inch baking dish with cooking spray.
In medium bowl, stir the biscuit mix and water until soft dough forms. Add in the seasonings. Drop half of the dough by spoonfuls evenly in the bottom of the baking dish (dough will not completely cover the bottom of the dish).
Drizzle about 1/2 of the alfredo sauce over the dough. Sprinkle about half of the tomatoes & spinach over the sauce. Top with about 1/2 of the cheese. Repeat a second layer with the remaining dough, alfredo sauce, tomatoes, spinach and cheese.
