Welcome to #WaffleWednesdays y'all!! I have partnered with Kellogg's to

will be sharing Eggo waffle recipes here every Wednesday until the end
of October!! But don't expect eight weeks of boring, waffle-filled
breakfasts! We're thinking outside of the box & cooking up your
favorite desserts, game day snacks & holiday treats all using
waffles!!
So last week I shared with y'all a super yummy
Mini Pumpkin Cheesecake that would be perfect for Thanksgiving dessert! Well I just couldn't move away from the sweets & I've got another delicious dessert for you today!
I've taken the classic apple pie and turned it into golden waffle goodness. Top these Apple Pie Stuffed Cinnamon Sugar Waffles with a scoop of Breyer's Ice Cream and you've got all of the flavors of the classic American dessert without all the work!
And technically, since it's waffles & fruit, no one would fault you at all if you ate it for breakfast! ;)
APPLE PIE STUFFED CINNAMON SUGAR WAFFLES
YIELD: serves 1
INGREDIENTS:
COOKING DIRECTIONS:

Preheat the oven to 350 degrees. In a small bowl, mix together the sugar & cinnamon.

Toast the waffles according to the package directions. Once toasted, dip the waffles into the melted butter, being sure to evenly coat both side. Place the waffles on a baking sheet. Generously sprinkle the cinnamon sugar mixture over one side of the waffles. Flip to the other side & then sprinkle on more of the cinnamon sugar mixture.

Bake the waffles for 4 minutes, flip, and then bake for 3-4 additional minutes {you want the waffles to crisp up a little but still have some of the soft, melted butter goodness}

Place on waffle on a serving plate. Top the waffle with the apple pie dip. Top with the remaining waffle to make a sandwich. Serve warm topped with a scoop of the Breyer's Ice Cream!
