Cherry Dessert Casserole #CountryCrockStars

Who doesn't love a good casserole?  The classic one dish meal that can make breakfast, lunch or dinner, and even desserts, so quick and easy to put together.  And you know what helps make it even easier?  Country Crock!

Do y'all have that one product that you're name brand loyal to?  The one that you'll buy even if it's not on sale, not the best deal that week, and you don't have a coupon available for it??  Well Country Crock is that product for me!  And I'm not just saying that because they're paying me!  I always have a tub of Country Crock in my fridge!  I grew up on Country Crock and it's what I always buy for my family.  It's my go to for everything from toast to cookies!

Mom's Test Kitchen: Cherry Dessert Casserole




CHERRY DESSERT CASSEROLE
YIELD: 6 servings
 
INGREDIENTS:
  • 1 & 1/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 stick (1/2 cup) Country Crock Spread
  • 3/4 cups sugar
  • 3 eggs
  • 1/2 teaspoon vanilla extract
  • 1 cup maraschino cherries
  • powdered sugar for dusting
  • warm milk (optional)

COOKING DIRECTIONS:
  1. Preheat the oven to 350 degrees. Prepare a 1 & 1/2 quart casserole dish by lightly buttering and flouring the sides and bottom. In a medium mixing bowl add the flour, baking powder and salt; mix and set aside.
  2. In your mixer, cream together the Country Crock and sugar. Add the eggs one at a time, making sure to mix well after each egg. Add the vanilla and then the flour mixture a little at a time, scraping the sides of the bowl as it combines.
  3. Continue mixing until the flour mixture is incorporated. Fold in a 1/2 cup of the cherries, and then transfer mixture to the prepared casserole dish. Arrange the other 1/2 cup of cherries over the top and bake uncovered for 45-50 minutes. Let cool and dust with powdered sugar.
  4. Optional ~ pour warm milk over casserole when serving

Mom's Test Kitchen: Chicken Satay Bites



Welcome to this month's Secret Recipe Club!!  This is my third month with the group and I am loving every minute of it!  It has been so much fun finding new blogs & recipes every month.  If it weren't for this group, I might have never stumbled across such great people and their food!  Great people like Dena from Oh! You Cook! , my secret recipe club mission for this month! :)

Dena has so many great recipes that just so happen to be kosher!  Now, I am not Jewish but my very best friend from school is & I practically lived at her house growing up so many of Dena's recipes brought back great memories of meals with my second family.  I had a hard time deciding which of her recipes I wanted to recreate but I finally landed on her Chicken Satay Bites and I'm glad I did!!



CHICKEN SATAY BITES
YIELD: 40 appetizers
 
INGREDIENTS:
  • 1 package (5 6-inch rounds) pita bread
  • 2 tablespoons olive oil, divided
  • 1/4 cup peanut butter
  • 1 bunch chopped fresh cilantro, stems removed
  • juice from 2 small limes
  • 3 tablespoons water
  • 1 teaspoon ground ginger
  • 1-2 dashes hot sauce
  • 1 pound chicken tenderloins, cooked & shredded
  • additional cilantro for garnish (optional)

COOKING DIRECTIONS:
  1. Preheat the oven to 400 degrees. Cut each pita into 8 wedges. Lightly brush rough sides of triangles with 1 tablespoon of the oil and place, oiled side up, on a baking sheet. Bake until crisp and golden, 8 to 10 minutes. Place triangle toasts on a serving platter and set aside.
  2. Using a food processor, pulse the peanut butter, chopped cilantro, lime juice, water, ginger, hot sauce, and remaining tablespoon of olive oil until combined but still thick.
  3. In a large bowl combine the chicken with the peanut sauce. Spoon mixture onto the pita toasts. Top with the additional cilantro leaves, if desired.

I'm not sure about y'all but April has completely flown by!  And Mother Nature is just screwing with us ~ it was perfect Spring weather a day ago & now it's barely 50 degrees outside!  Maybe this means the summer won't be as hot??  {anyone in TX, don't freak out, I'm knocking on wood!!}
