INGREDIENTS:
2 chicken breasts, cut into strips if desired
3 tablespoons dry bread crumbs
1 tablespoon grated Parmesan cheese
2 tablespoons vegetable oil, divided
2 cloves garlic, minced
1 onion, thinly sliced
2 medium zucchini or squash, thinly sliced
LETS COOK:
1. In a shallow dish, combine the bread crumbs and Parmesan cheese. Season with salt & pepper. Dredge your chicken slices to coat.
2. Heat 1 tablespoon of the vegetable oil over medium to medium-high heat in a large skillet. You want it to be hot enough to cook the chicken but not too hot to burn the bread or cheese. Saute the chicken until no longer pink inside. Remove the chicken to a plate and keep warm.
3. Add the remaining tablespoon of oil to the skillet and add the onion, garlic & zucchini and saute until tender, about 5 minutes.
