Southwest Chicken Rolls {@LMLDFood Guest Post}

If you're reading this, that means I'm on VACATION!!!!  Actually, at this point, I'm semi on vacation.  I'm probably in a car.  On a 16 hour road trip.  With my sister, dad & the three kiddos.  I probably shouldn't call this vacation. ;)  Nah, I'm just kidding!  We're heading to the East Coast to visit aunts, uncles, cousins and my grandmother.  So excited!!

While I'm gone a few friends are going to be taking over the Kitchen & sharing some awesome recipes with y'all!!  I know you're going to love them!!  I'll be around off & on while I'm gone but I'll be back next week!!  Catch ya later! :)

My name is Aimee and I blog at Like Mother Like Daughter, where I blog with my mother. We share our favorite recipes, products and restaurants on the blog. I started this blog to stay connected with my mom as we lived in different states, and to share our favorite foods with each other. I still love to share my favorite recipes with her and with others, and hope we can enjoy cooking together!

These Southwest Chicken Rolls are one of my favorite things I've made. They are a delicious flavor combination of the best southwest flavors and I think you'll love them too!

Southwest Chicken Rolls

2 cups cooked and shredded or chopped chicken (I used part of a rotisserie chicken)
1 (10 oz) can corn, drained and rinsed
1 (10 oz) can black beans, drained and rinsed
1 (14 oz) can diced tomatoes, drained
1/2 yellow onion, diced
1 cup spinach, chopped
1/2 red pepper, chopped
1 TBS cumin
1/2 TBS chili powder
1/2 TBS salt
1/4 tsp cayenne pepper
1 package egg roll wrappers

1. Preheat oven to 425 degrees.
2. Combine chicken, corn, black beans, tomato, onion, spinach, red pepper, cumin, chili powder, salt and cayenne pepper in a large bowl.
3. Stir together to mix well.
4. Lay out an egg roll wrapper.
5. Place 1/4 cup filling in the middle of the bottom half.
6. Roll up wrapper according to package directions (Roll bottom up over filling. Fold 2 corners in. Continue to roll up. Seal edges with water on your finger tips
7. Repeat with remaining rolls.
8. Place rolls on a greased cooking sheet seam side down.
9. Bake for about 20 minutes, flipping after 10 minutes.

Wonderful Food Wednesday

The summer is speeding by but there is still time for vacation!!  Sorry, I'm just so excited!  I'm leaving tomorrow for a week long vacation & I can't wait!!  But to give y'all a heads up ~ next week's party might be posted late.  I'll be traveling home on Tuesday so depending on what time I get home & if I possibly have access to Wi-Fi Monday night will all determine when it goes live for me!  I'll try to get something posted on Facebook Tuesday letting y'all know if it's going to be late & giving y'all an idea of when it might be up!  I'll also be trying to pin & share your recipes on FB as much as I can this next week while I'm gone but I might not be able to this next week, so please forgive me if I don't get as much love for y'all out there!  But I'm going to try!!  Anyway, lets get to the party!!

This week we are celebrating a summer staple - berries. We've chosen recipes that feature strawberries, blueberries, blackberries, and raspberries in a variety of creations. From salad dressing to pie, berries are so versatile, delicious and nutritious.

Butterscotch Brownies

Alright, so we're going to talk about something today.  Something that probably won't surprise you at all.  I like to eat.  Everyone good, picked yourself up off the floor from that shocking revelation??

Seriously though, it's not just that I like to eat.  I like to snack.  I can munch on food all day if it's sitting there.  My sister laughs at me because I can come from just having had a huge, belly-filling meal & I walk into her house and it's like a magnet, I go straight to her pantry.  I may not actually get anything to eat but I have to look for my options.  I like to snack so much that most nights I would rather sit down & have a few different appetizer options for dinner than a full meal.  Luckily I married a man who's ok with that too :)

The downfall is that I have created a daughter who would rather snack than sit down and eat full meals now too.  I try to stick to my guns with the whole you will eat what I put in front of you thing but it's hard to try to push her to do something I don't always do myself.  This is why I always try to keep healthy snacks in the house so I at least know she's not just filling up on junk.  Which is why I love the Wonderful Brands of snacks.

Peanut Butter Chocolate Chunk Bread #SecretRecipeClub

Peanut Butter is good.  Really good.  Like eat with a spoon straight from the jar good.  Throw in some chocolate and you have probably the best combo ever.

For this month's Secret Recipe Club, I had the honor of picking a recipe from our groups amazing hostess, Janie from Fantastical Sharing of Recipes!!  It does kinda defeat the whole 'secret' portion when she's emailing me her website! ;)  But I was very excited to get her blog, I have known Janie for awhile, even prior to joining the Secret Recipe Club so I was honored to get the opportunity to make some of her recipes!

I actually picked out two of her recipes that I couldn't decided between so I went ahead and made both.  Janie's Bacon Chicken Avocado Club Sandwich with Garlic-Basil Mayo was absolutely delicious!  I made it for a simple dinner for the Hubs and I one night & we loved it.  The only change I made was I used deli sliced chicken for the sandwich instead of grilled chicken breast.  But then, like the lazy food blogger I am, I didn't photograph the sandwiches.  I was hungry.

But I'm so glad I did because it gave me the excuse to make her Peanut Butter Bread too.  DELICIOUS!  I had some extra dark chocolate left over from making the Cranberry Chocolate Chunk Bread so I decided to throw that in for the perfect dessert bread combo!  I was not disappointed!!


Peanut Butter Chocolate Chunk Bread



PEANUT BUTTER CHOCOLATE CHUNK BREAD 
YIELD: 8-10 slices

INGREDIENTS:
  • 2 cups flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup butter, room temperature
  • 1/2 cup sugar
  • 1/4 cup brown sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 3/4 cup creamy peanut butter
  • 1 cup milk
  • 1.75 ounces {about 1/2 of a 3.5 ounce} dark chocolate candy bar, chopped
  • turbinado sugar for sprinkling {optional}

COOKING DIRECTIONS:
  1. Preheat the oven to 350 degrees. Grease a 9x5 loaf pan.
  2. In a medium bowl, sift together the flour, baking powder & salt. Set aside.
  3. Using your mixer, cream together the butter and both sugars until smooth. Add in the egg & vanilla and mix until combined. Add in the peanut butter. Slowly add in the flour mixture ~ dough will become crumbly. Add in the milk and mix until smooth.
  4. Pour the dough into the prepared loaf pan. Sprinkle the top of the dough with turbinado sugar is desired. Bake for 50 minutes. Allow to cool in the pan for 15 minutes than remove to a wire rack to cool completely.
