Attempt #2 turned out a little better. Good enough that I photographed it & I'm blogging it at least ;) The flavor in this one was really good! The fail about this recipe though is the caramel never really set & the popcorn stayed very very sticky. Not too sticky that it couldn't be eaten though {as long as you had plenty of wet wipes around}!!

one year ago: soaked oatmeal raisin pancakes
HOMEMADE FIDDLE FADDLE
YIELD: 4 servings
INSPIRED BY: Recipe Snobs
INGREDIENTS:
- 1/2 cup sugar
- 1/3 cup light corn syrup
- 1/2 cup butter (1 stick)
- 1 teaspoon vanilla extract
- 2 bags microwave popcorn, popped & unpopped kernels removed
- 1/2 cup salted peanuts
INSTRUCTIONS:
In a medium saucepan, combine the sugar, corn syrup, and butter. Bring to a boil, & boil for 3 minutes. Remove from heat and add the vanilla extract.
Mix the popped popcorn & peanuts in a large bowl. Slowly pour the caramel mixture over the popcorn and nuts. Quickly stir the hot mixture into the popcorn until evenly covered. Cool and serve.
